Pesto Rice and Beans Crockpot Recipe



Ingredients needed:

* 1 can of Great Northern beans, rinsed and drained (15 ounces)
* 1 can of chicken broth (14 ounces)
* 3/4 cup of uncooked converted long -grain rice
* 1 1/2 cups of frozen cut green beans, thawed and drained
* 1/2 cup of prepared pesto
* Grated Parmesan cheese (optional)

Preparation steps:

* Combine beans, broth and rice into crockpot. Cover and cook on low for 2 hours.
* Stir in green beans. Cover and cook on low for 1 hour or until rice and beans are tender.
* Turn off crockpot and transfer stoneware to heatproof surface. Stir in pesto and Parmesan cheese, if desired. Let stand, covered, 5 minutes or until cheese is melted.

Serve immediately and enjoy.
