Mediterranean Chicken Crockpot Recipe



Ingredients needed:

* 1 tablespoon of olive oil
* 2 pounds of boneless, skinless chicken breasts
* 1 can of diced tomatoes, undrained (28 ounces)
* 2 onions, chopped
* 6 teaspoons of minced garlic
* 1/2 cup of sherry
* Juice of 2 lemons
* 2 cinnamon sticks
* 1 bay leaf
* 1/2 teaspoon of black pepper
* 1 pound of hot cooked broad noodles
* 1/2 cup of feta cheese

Preparation steps:

* Heat oil in large skillet over medium heat until hot. Add chicken and lightly brown on both sides.
* Combine tomatoes with juice, onions, garlic, sherry, lemon juice, cinnamon, bay leaf and pepper into crockpot. Add chicken.
* Cover and cook on low for 8 to 10 hours or on high for 4 to 5 hours.
* Remove and discard cinnamon sticks and bay leaf.
* Serve chicken and sauce over noodles.
* Sprinkle with cheese just prior to serving.
