Wild Rice with Fruits and Nuts Crockpot Recipe



Ingredients needed:

* 2 cups of wild rice (or wild rice blend), rinsed
* 1/2 cup dried cranberries
* 1/2 cup chopped California sun-dried raisins
* 1/2 cup chopped dried apricots
* 1/2 cup almond slivers, toasted
* 5 to 6 cups of chicken broths
* 1 cup of orange juice
* 2 tablespoons of butter, melted
* 1 teaspoon of ground cumin
* 2 green onions, thinly sliced
* 2 to 3 tablespoons chopped fresh parsley
* Salt and black pepper, to taste

Preparation steps:

* Combine wild rice, cranberries, raisins, apricots and almonds into crockpot.
* Combine 5 cups of chicken broth, orange juice, butter and cumin in medium bowl. Pour mixture over rice; mix well.
* Cover and cook on low for 7 hours or on high for 3 hours. Stir once, adding more hot broth if necessary.
* When rice is soft to the bite, add green onions, parsley, salt and pepper.
* Cover and cook on low for 10 minutes longer.
